What do I Need to Make the Instant Pot Creamy Lemon Pork Chops?

You won’t need much to make these simple chops other than the Instant Pot, a spoon, about 30 minutes, and a few ingredients! You know I love a meal that comes together fast and this one fits right into that plan.

From your fridge, you will need pork chops, butter, one lemon, spinach, parmesan, mushrooms, and heavy cream.

Then check your pantry for flour, salt and pepper, olive oil, chicken or beef broth, and garlic powder. I list the exact amounts you need in the recipe box below.

How to Make the Instant Pot Creamy Lemon Pork Chops

After you have gathered all the ingredients and your Instant Pot, you will want to turn on the saute function to pre-heat the pot. While it’s heating you can mix the flour, salt, and pepper together in a bowl and drag your chops through it coating them on both sides. Then place the olive oil in the heated pan.

In batches, brown the pork chops on both sides but do not cook through. Remove the pork chops and keep them warm. I like to cover them with aluminum foil and set them in my microwave. After that, add the broth to the pan and scrape the bottom of the electric pressure cooker with a wooden spoon to release any stuck-on bits. Cancel the saute function.

Next, place the pork chops back into the electric pressure cooker and top them with mushrooms, lemon juice, and garlic powder. Season with salt and black pepper if desired.

Cover your electric pressure cooker with the lid and set the valve to “sealing.” Program the electric pressure to cook on “manual” or “pressure cook” for 10 minutes.

I like to use this time to make a side to add to the chops. For a complimentary side, try my cauliflower rice or brown rice recipes. You might even want to add some veggies like sheet pan roasted broccoli or low carb Cauliflower Au gratin with Bacon.

When the cooking cycle is complete, quickly release the pressure. Carefully remove the lid of the electric pressure cooker and add the spinach, parmesan, and heavy cream. Stir it until the spinach has wilted and the cheese is melted.

Can you smell that yet? It’s so good.
