How do I prepare Crock Pot Sante Fe Lettuce Wraps?
First, prepare your slow cooker by spraying the liner. You’ll thank yourself later when you’re trying to clean up! Place chicken in the bottom of the slow cooker. Cover with black beans, corn, tomatoes, green chiles, ground cumin, and salsa.
Cover and cook on high for 3 hours or low for 6 hours. Carefully shred the chicken with two forks. Stir in the cream cheese until completely melted. Serve the chicken mixture on lettuce leaves or tortillas with additional toppings as desired.
Can I freeze Santa Fe Chicken Wraps?
This is one of those meals that you may want to freeze for later, but you don’t know how. First of all, you don’t want to freeze the cream cheese or toppings. Go ahead and make this recipe as the recipe card says. However, you don’t want to add the cream cheese to it. Double wrap the completed chicken recipe in a freezable dish and you can store it for up to six months.
You will love having these wraps on hand in your freezer for a busy day! Simply warm up your chicken mixture, blend with cream cheese, and prepare as you normally would by wrapping with lettuce leaves or tortillas and add toppings!
