What Do I Need For This Meal?
For roasted vegetables:
- 3 red bell peppers, seeded and sliced
- 1 large red onion, sliced
- 1 teaspoon olive oil
- Salt and black pepper, to taste
For the meatballs:
- 3.5 pounds lean ground beef
- 3 cups dry bread crumbs
- 3 eggs
- ¼ cup finely chopped parsley
- ½ cup finely grated red onion
- 1 ½ teaspoon garlic powder or 6 cloves garlic, minced
- 3 teaspoons dried oregano
- 1 ½ teaspoon salt
- 1 teaspoon black pepper
For the Tzatziki sauce:
- 1 cup plain yogurt
- ½ English cucumber, shredded and drained well
- 1 lemon, juiced
- ½ teaspoon garlic powder or 1 clove garlic, minced
- 2 teaspoons fresh dill, snipped
- Salt and black pepper, to taste
For the gyros:
- Greek cucumber salad
- Warm pitas
- Crumbled feta cheese
How Do I Make Greek Meatballs For Gyros Sheet Pan Recipe?
While your oven is pre heating to 400, you’ll need to prepare your large baking sheet with parchment paper (or aluminum foil) and lightly spray it with cooking oil. Next, take your sliced red onions and peppers and place them on the baking sheet in an even layer. You’ll next need to drizzle them with olive oil and season with your salt and pepper. Toss these to combine them well and smooth it all out to be ready for the meatballs.
In your large mixing bowl, toss all of the fixings for the meatballs. You don’t have to worry about being perfect here! Throw them in and mix them together thoroughly. Yo can use a mixer or even your hands for this step. You just really want to make certain everything is mix well.
Grab your cookie scoop (or two lightly greased hands) and stat making your meatballs. Place each meatball onto the top of your sheet pan over the vegetables.
Place in your hot oven for about 8-10 minutes until the meat is cooked all the way though. At this stage you can place them on broil and cook them for some added crispiness and brown-ness, but you’ll want to be careful not to burn.

Instructions

Preheat the oven to 400 degrees. Prepare a large sheet pan with aluminum foil spritzed with nonstick cooking spray or rubbed with olive oil.

Over the sheet pan, place the vegetables for roasting. Drizzle with olive oil and season with salt and black pepper. Toss to combine and then spread into an even layer.

Place the ingredients for the meatballs in a mixing bowl and beat (or mix with your hands) until completely combined.

Using a large cookie scoop, divide the meat mixture and shape into balls. Place the meatballs on the baking sheet over the vegetables.

Bake for 8 to 10 minutes or until the meatballs are cooked through.

If desired, turn on the broiler and cook for an additional 2 to 5 minutes, watching closely.

Meanwhile, mix the ingredients for the Tzatziki sauce until combined. Cover and refrigerate until ready to use.

Note: Ground lamb may be substituted for the ground beef or use a combination of the two.
