Ingredients Needed to Make the Chicken, Broccoli, Cheese & Rice Instant Pot Casserole

If you’d like to make the Chicken, Broccoli, Cheese & Rice Instant Pot Casserole, you’re going to need these important ingredients:

  • Chicken Breast. Use boneless, skinless chicken breast and cut it into cubed pieces. Here are more chicken recipes!
  • Garlic Powder. Add garlic powder to your chicken to enhance its flavor.
  • White Rice. Use regular white rice in this recipe with chicken, cheese, and broccoli.
  • Broccoli Florets. Measure out four cups of frozen broccoli florets.
  • Chicken Broth. Give your casserole more flavor using chicken broth.
  • Shredded Cheddar Cheese. The cheddar cheese adds the perfect flavor while melting over the chicken, broccoli, and rice.

You’ll also need salt, pepper, olive oil, onion powder, dried thyme, and diced onion for this recipe.

Can I use chicken thighs instead of chicken breast?

This recipe tastes best when using chicken breast cut into small pieces. If you don’t have chicken breast, you can use chicken thighs, but you’ll need to make sure they’re skinless and boneless before chopping the thighs into pieces.

Does it matter which type of rice I use?

You can use any type of white rice that you’d like for this recipe, such as long-grain or short-grain rice. If you’d prefer to use brown rice in this recipe, it’s fine to do so.

Can I use sharp cheddar cheese?

You can use regular cheddar cheese or sharp cheddar cheese when adding the cheddar to your casserole. It all depends on which one you prefer! You can even change it up by trying new cheese options or using whatever cheese you have on hand.

Which type of chicken broth should I get for this recipe?

The type of chicken broth used doesn’t matter too much. It’s even possible to use homemade chicken broth if you already have it in your fridge. If not, choose whichever brand you prefer. It’s also a good idea to use low-sodium chicken broth to keep the sodium levels low.

How do I save the leftovers to eat later?

If you have any leftovers, put them into a large food storage container with a lid. If you don’t have a lid, wrap the container with aluminum foil to keep your food fresh. You can reheat your leftovers in the microwave for at least 60-90 seconds to get them hot again when you’d like to have more.

Can I add anything to the recipe?

You can add other ingredients to the recipe if you’d like. Some people like to add corn with broccoli, cheese, and chicken. You might also want to add some shredded carrots or peas into the mixture!

Ingredients

  • 4 tablespoon olive oil
  • 4 pounds boneless, skinless chicken breast, cut into bite-size pieces
  • 2 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon dried thyme leaves
  • 2 medium onion, diced
  • 3 cups white rice
  • 5 cups chicken broth
  • 6 cups shredded cheddar cheese, divided
  • 8 cups frozen broccoli florets

 

 


Instructions

  1. Using the saute mode, heat the electric pressure cooker until “hot.” 

  2. Mix the dry seasonings together. Sprinkle the seasonings on the chicken.

  3. Add the olive oil to the electric pressure cooker. Brown the chicken on all sides.

  4. Add the onion to the chicken. Cook until the onion is softened, about 3 to 5 minutes. 

  5. To the electric pressure cooker, add the chicken broth. Scrape the bottom to remove any cooked on pieces. Cancel the saute mode.

  6. Pour the rice over the chicken. Do not stir.

  7. Place the lid on the electric pressure cooker and set the valve to sealing. Set the pressure cooker to “manual” or “pressure cook” for 10 minutes. Quick release the pressure when the cook cycle is complete.

  8. Stir in the broccoli and 2 cups of cheese. Replace the lid and allow the electric pressure cooker to “keep warm” until the broccoli has softened to your desired tenderness. Ideally, this will take 10 to 15 minutes.

  9. Top with remaining cheddar cheese and place the lid over the pressure cooker just until the cheese melts.
