- Cream cheese
- Heavy cream
- Fresh basil, for garnish
Can I use Chicken Thighs Instead of Chicken Breast?
This recipe tastes best when using chicken breast cut into small pieces. It is easier to chop into pieces, especially after adding it to the slow cooker for several hours with your cream cheese and tomatoes. If you don’t have chicken breast, you can use chicken thighs, but you’ll need to make sure they’re skinless and boneless before chopping the thighs into pieces.
How Do I Prepare Crock Pot Creamy Chicken Tomato Basil?
I always like to make certain to line my crockpot with cooking spray. This helps to make cleanup easier on down the line! Start by placing the chicken, tomatoes, tomato sauce, garlic, and seasonings into the slow cooker. Be sure to place the cover on the cooker and cook on high for 3 hours or slow for 5 hours.
Once the chicken is thoroughly cooked, carefully remove it from the slow cooker and place to the side. Next, stir the cream cheese into the sauce until melted. Then, add the heavy cream. If you want a thicker sauce, then just mix the water and cornstarch and add it to your slow cooker. Finally, return the chicken breasts to the slow cooker. Serve over the noodles of your choice! Ingredients
6 boneless skinless chicken breasts, halved
1(28 ounce) can diced tomatoes
1 (15 ounce) can tomato sauce
4 cloves garlic, minced or 1 teaspoon garlic powder
1 tablespoon Italian Seasoning
1 teaspoon salt
½ teaspoon black pepper
1 (8 ounce) package cream cheese, room temperature
1 cup heavy cream
1 tablespoon cornstarch, if desired
1 tablespoon water, if desired
Fresh basil, for garnish
Instructions

Prepare the slow cooker liner with nonstick cooking spray.

Place the chicken, tomatoes, tomato sauce, garlic, and seasonings into the slow cooker.

Cover and cook on high for 3 hours or low for 5 to 6 hours.

Carefully remove the chicken breasts from the slow cooker and stir in the cream cheese until melted. Then, add the heavy cream. (If a thicker sauce is desired, mix the water and cornstarch and add it to the slow cooker.) Return the chicken breasts to the slow cooker.

Cover and cook for an additional 30 minutes or until thickened.
