Ingredients
- 3 to 4 pounds beef top round steak, sliced thin (I used stir fry meat)
- 2 tablespoons olive oil
- 1 cup onion, cut into 1 inch pieces
- ½ cup reduced-sodium soy sauce
- 2 garlic cloves, minced
- 1 teaspoon sugar
- ½ teaspoon salt
- ½ teaspoon ground ginger
- ½ teaspoon pepper
- 2 (14.5 ounce) cans diced tomatoes, undrained
- 4 large green bell peppers, seeded and cut into 1 inch pieces
- To thicken, if desired:
- 1 tablespoon cornstarch
- ½ cup water
To serve:
Hot cooked noodles or rice
Instructions

Heat the oil in a large skillet and brown the beef in small batches. Transfer the beef to a slow cooker.

Place the onions and bell pepper with the beef in the slow cooker.

Combine the soy sauce, sugar, salt, ginger, garlic, and tomatoes. Pour over the beef and vegetables.

Cover and cook on low for 5 to 6 houses until the meat is tender.

If desired, 30 minutes prior to serving, combine the cornstarch and water. Stir until smooth and slowly stir into the slow cooker. Cover and cook on high an additional 30 minutes.
