This easy dinner is the perfect addition to your large family menu. There are a few things you’ll need first to feed your large family. Be sure to stock up on my favorite kitchen supplies, too.
- Chicken Thighs. You will need at least 12 chicken thighs for this recipe. The chicken thighs offer more flavor than other cuts of the chicken. We have lots of flavorful chicken meals for you to try!
- Greek Dressing. Use a brand of Greek dressing that you prefer. The brand is not too important.
- Minced Garlic. Grab cloves of garlic and mince it into small pieces before adding it to this recipe.
- Grape Tomatoes. Use at least two pints of grape tomatoes to go with the chicken in this recipe.
- Pimento-Stuffed Green Olives. Grab the pimento-stuffed green olives to put on your sheet pan with the tomatoes and chicken.
There are a few other ingredients that go with this dish, including all-purpose flour, salt, pepper, onion, chicken broth, kalamata olives, and parsley. Although parsley is optional, you can use it to garnish the top of your food as a finishing touch.

Big Family Oven-Baked Olive and Tomato Chicken Sheet Pan Dinner

Ingredients
- 12 chicken thighs
- 1 (16 ounce) bottle Greek dressing
- ¾ cup all purpose flour
- Salt and black pepper, to taste
- 1 onion, halved and sliced
- 4 cloves garlic, minced
- 2 pints grape tomatoes
- 1 cup chicken broth
- 2 cups pimento-stuffed green olives
- 2 cups kalamata olives
- ¼ cup chopped parsley, for garnishing
Instructions

Place chicken in an airtight container and cover with Greek dressing. Seal the container and place the chicken in the refrigerator overnight to marinate.

Preheat the oven to 400 degrees. Prepare two large, rimmed baking sheets with nonstick cooking spray.

Remove the chicken from the marinade. Stir together flour with desired amount of salt and black pepper. Rolled the chicken in the flour.

In a large skillet over medium-high heat, add the olive oil. Place the chicken skin-side down in the pan. Cook about 3 to 4 minutes on each side, until the sides have browned. Transfer the chicken to the baking sheets.

Add the onions to the skillet, reduce the heat to medium, and saute for 3 to 4 minutes. Add the garlic and capers to the skillet and continue to cook for 1 to 2 minutes, stirring occasionally.

Deglaze the pan with the chicken broth, scraping up the bits from the bottom of the pan. Remove from heat.

Add the tomatoes and olives around the chicken. Pour the sauce over the chicken, arranging the onions around the chicken.

Cook for 30 to 35 minutes or until the chicken reaches an internal temperature of 165 degrees.

Garnish with parsley before serving.
Notes
*This recipe requires time to marinate. Be sure to account for that time when planning your meal. It can be marinated overnight.
