Instant Pot Chicken Cacciatore

- 4 pounds boneless, skinless chicken thighs
- 2 tablespoons olive oil
- 4 cups chicken stock
- 1 onion, diced
- 2 green bell peppers, seeded and cut into 1-inch pieces
- 1 (8 ounce) package sliced baby bella mushrooms
- 2 (28 ounce) cans crushed tomatoes
- ½ cup red wine vinegar
- 2 tablespoons Italian seasoning
- 1 teaspoon salt
- 6 cloves garlic, minced
Ingredients

Heat electric pressure cooker using the “saute” function until hot. In batches, add the olive oil to the pot and brown the chicken thighs on both sides. Keep chicken warm while all the chicken is browned.

Remove the chicken from the pressure cooker and deglaze the bottom with chicken broth, scraping to remove any cooked on pieces. Add the chicken back to the pressure cooker.

In a large bowl, combine the tomatoes, red wine vinegar, seasoning, salt, and garlic until blended.

Top the chicken with the sauce and then vegetables. DO NOT STIR.

Cover the electric pressure cooker with the lid and set the valve to sealing. Program to cook on “manual” or “pressure cook” for 8 minutes. Once the cook cycle is complete, use a quick release to relieve the pressure.

Remove the lid and stir the chicken, vegetables, and sauce.

Serve over noodles and topped with freshly grated Parmesan cheese.
To cook in the slow cooker:

Prepare slow cooker liner with nonstick cooking spray.

Place the chicken in the slow cooker.

In a large bowl, combine the tomatoes, red wine vinegar, seasoning, salt, and garlic until blended.

Top the chicken with the sauce and then vegetables.

Cover and cook on low for 5 to 6 hours.
