Blueberry Buttermilk Pancake Casserole

Blueberry pancakes are just the best! Now you can enjoy them in a whole new way with this easy Large Family Blueberry Buttermilk Casserole. It has the same great taste like pancakes, but it’s a foolproof recipe containing the freshest ingredients.

You can make this delicious casserole from scratch and have plenty of servings to feed your family. You can even prepare this casserole in advance, freezing it to eat later.

Ingredients Needed to Prepare the Blueberry Buttermilk Casserole

You should have a few important ingredients ready to use when preparing your Blueberry Buttermilk Casserole, including:

  • Baking Mix. You can use any brand of baking mix that you enjoy most.
  • Fresh Blueberries. The blueberries are the star of the show and will give this casserole a sweet touch.
  • Buttermilk. Adding buttermilk gives this casserole a slight tang, enhancing its flavor even more.

You’ll also need eggs and unsalted butter to prepare the base of the Blueberry Buttermilk Casserole. When preparing the topping for the casserole, you’re going to need flour, packed brown sugar, cinnamon, white sugar, and more butter.

Do I need to use fresh blueberries?

The Large Family Blueberry Buttermilk Casserole calls for fresh blueberries. It’s best to use them after rinsing them off. However, if you only have frozen blueberries, you can still use them. You’ll need to give them time to thaw before adding them.

Can I just use cinnamon sugar to prepare the topping for the casserole?

While cinnamon sugar is convenient, it won’t give you the same exact taste that using ground cinnamon, brown sugar, and white sugar will for the topping. If you are going for that perfect taste then it’s better to use the separate ingredients to create your sweet and flavorful topping.

However, if you are in a hurry or it’s all you have on hand and you want to save a bit of money then it’s perfectly fine to make use of what you have.

Can I add other fruits to the casserole?

Although you don’t need to add extra fruit to the Large Family Blueberry Buttermilk Casserole, you’re more than welcome to do so. Some other fruits that will taste great with this dish include strawberries, raspberries, and bananas.

If you want to add a taste of chocolate to the casserole, you can even add mini chocolate chip morsels into the batter for the casserole before you bake it in the oven.

What can I do if I don’t have buttermilk?

If you don’t have buttermilk at home, you can quickly make it. All you’ll need to do is add white vinegar or lemon juice to a cup of milk to prepare buttermilk. Make sure you’re allowing the milk to sit for about 30 minutes before you use it.

How to Freeze the Blueberry Buttermilk Casserole

When you want to make this dish in advance and save it for later, allow it to cool before covering it with a large sheet of aluminum foil. You can put it in the freezer and leave it there for up to six months before reheating it, slicing it, and serving it to your loved ones.

You can also cut it into individual pieces and wrap it in parchment paper prior to storing it in an airtight container and freezing it.

Description

Ingredients

For the casserole:

  • 5 cups baking mix
  • 4 eggs
  • 4 cups buttermilk
  • 8 tablespoons unsalted butter, melted and cooled
  • 3 cups fresh blueberries

 

For the topping:

  • 1 cup all-purpose flour
  • 6 tablespoons packed brown sugar
  • 6 tablespoons sugar
  • 1 teaspoon ground cinnamon
  • 1 1/2 cup (3 sticks) butter

 


Instructions

  1. Preheat the oven to 350 degrees. Prepare two 9×13 casserole dishes with nonstick cooking spray.

  2. Whisk together the baking mix, eggs, buttermilk, and butter until just mixed. The batter will be lumpy. 

  3. Fold the blueberries into the batter, reserving a few and dropping them on top.

  4. In a separate bowl, combine the flour, sugars, and cinnamon. Sprinkle over the top of the casseroles. Cut the butter into pats and place in even rows on top.

  5. Bake for 45 to 50 minutes or until the top is golden.

  6. Allow cooling slightly prior to slicing. Serve with syrup.


Notes

To freeze: Cool completely and wrap tightly. Or, if desired, cut into individual pieces and wrap in parchment paper prior to storing in an airtight container and freezing. Freeze up to 6 months. To reheat, bake in the oven or microwave until warm.
