Ingredients
- 3 pounds chicken breast tenders
- 2 pounds Brussel sprouts, cut in half
- 1 red onion, cut into wedges
- ½ cup balsamic vinegar
- ¼ cup olive oil
- 2 tablespoons dried basil
- 2 teaspoons garlic powder
- 1 tablespoon dried oregano
- 2 teaspoons salt
Instructions

In a measuring cup, whisk together the balsamic vinegar, olive oil, basil, garlic powder, oregano and salt.

Place chicken tenders in a zip-top gallon-sized freezer bag. Add half of the dressing mixture. Seal and turn the bag over a few times to coat the chicken well. Allow the chicken to rest at room temperature while the oven preheats.

Preheat the oven to 400 degrees. Line two large baking sheets with parchment paper or aluminum foil. Spritz lightly with nonstick cooking spray.

In a large bowl, add the Brussel sprouts and onion. Pour remaining dressing over the vegetables. Toss to coat.

Arrange the chicken on the baking sheets. Place the vegetables around the chicken.

Bake for 20 to 30 minutes or until the chicken reaches an internal temperature of 165 degrees.

If desired, turn on the oven’s broiler function and cook for an additional 2 to 3 minutes, watching closely to avoid burning.
