Ingredients to Make the Shredded Chicken Nachos in the Instant Pot

Make your Shredded Chicken Nachos in the Instant Pot using these ingredients:

  • Chicken Breast. It’s best to have a minimum of one pound and a maximum of two pounds of chicken breasts for this meal. Here are more chicken meals to try!
  • Taco Seasoning. You’ll use the taco seasoning of your choice to bring flavor to your meat.
  • Chicken Broth. Use a cup of chicken broth to make these nachos. If you don’t have it, you can use water instead.
  • Queso Blend Cheese. The cheese is a great addition that pairs well with the chicken and tortilla chips.
  • Salsa. Use your favorite brand of salsa to add more flavor to your nachos.

You’re going to need several other ingredients for these nachos, including avocado slices, chopped cilantro, sliced black olives, Roma tomatoes, tortilla chips, and lime.

Can I use guacamole instead of fresh avocado slices?

It’s fine to use guacamole on your nachos instead of using fresh avocado slices. If you don’t like avocado or guacamole, you don’t even need to use it. You can skip it or replace it with something else, such as sliced black olives.

What if I only have chicken thighs available?

Chicken thighs will still work when used for this recipe. They’ll need to be skinless and boneless before you cook them. While it’s ideal to use chicken breast, chicken thighs will leave you with flavorful nachos, too.

Can I make these nachos with other meat or beans?

Maybe you don’t prefer chicken or have something else on hand. That can work, too! I have a Ground Beef Nacho sheet pan recipe as well as a Black Bean Nacho Sheet Pan Recipe. Both are easy and taste great. You can also substitute with ground turkey or sausage if that’s what you prefer or have on hand.

Which tortilla chips are best to use?

The specific brand of tortilla chips used to make the Large Family Shredded Chicken Nachos in the Instant Pot doesn’t matter too much. However, you should go for a brand that makes thicker tortilla chips. If they’re too thin, they can easily break when you’re adding your chicken and cheese to them. Having a thicker chip makes it more durable and keeps it from breaking.

Why do I need to put the nachos in the oven to broil?

You’ll put the nachos in the oven at the end to broil them for three minutes. It’s a perfect way to get your cheese to melt with ease, giving your nachos that perfect taste and texture. It doesn’t take long at all. Make sure you don’t walk away from the oven when you’re broiling the nachos because you don’t want them to burn.

Description

Perfect for small gatherings with friends and family, you can expect these Large Family Shredded Chicken Nachos in the Instant spot to impress. They’re loaded with delicious ingredients, including seasoned chicken, queso blend cheese, and sliced avocados!

 


Ingredients

  • 3-4 pounds medium boneless, skinless chicken breasts
  • 4 tablespoons taco seasoning
  • 2 cup water or chicken broth
  • 4 cups shredded queso blend cheese
  • 3 cups salsa
  • 1 cup sliced black olives
  • 1/2 cup chopped cilantro
  • 4 Roma tomatoes, seeded and diced
  • 4 avocados, diced
  • 2 lime, sliced
  • Tortilla chips

Instructions

  1. Place chicken breasts into the pot of an electric pressure cooker. Pour chicken broth and taco seasoning over the chicken.

  2. Place the lid on the electric pressure cooker and set the valve to sealing. Set the pressure cooker to “manual” or “pressure cook” for 14 minutes. When the cook cycle is complete, allow the pressure to naturally release for 5 minutes before a quick release of remaining pressure.

  3. Remove the chicken and shred with two forks (or shortcut by shredding with an electric mixer.)

  4. Preheat the oven broiler.

  5. Prepare two large baking sheets with aluminum foil. Spread tortilla chips over the foil in an even layer.

  6. Sprinkle the tortilla chips with half of the cheese.

  7. Place under the broiler for 3 minutes, watching carefully to keep the chips from burning.

  8. Remove from oven and top with the chicken, remaining cheese, and your desired toppings.
