If your children love nuggets, prepare these Large Family Simple Homemade Chicken Nuggets with ease. They are a healthier alternative that you can make in advance and freeze for the family.
- 5 to 6 pounds boneless, skinless chicken breast, cut into nuggets
- 2 cups flour
- 1 teaspoon salt
- ½ teaspoon black pepper
- 7 eggs, beaten well
- 4 cups cornflake cereal, ground fine
- ½ teaspoon paprika
Preheat the oven to 350 degrees. Prepare a large rimmed baking sheet with parchment paper spritzed with nonstick cooking spray.
Sift together the flour, salt, and black pepper.
Mix the ground corn flakes with paprika. Add additional salt and black pepper, if desired.
Set up a dredging station with the flour in one shallow dish, the beaten eggs in another shallow dish, and the cornflakes in a third shallow dish.
Flour the nuggets and then dip in the egg. Then dip the nuggets in the cornflakes before placing on the prepared baking sheet.
When all of the nuggets are breaded, place the baking sheet in the oven and bake for 20 to 25 minutes.
To freeze: Allow the nuggets to cool completely and then freeze in a single layer before transferring to an airtight container. Freeze up to 3 months. To reheat, preheat the oven to 400 degrees. Bake for 10 to 12 minutes or until heated through.
