One of our favorite freezer meals recipes is chicken, broccoli, & rice casserole. If you have time, you can make several pans of it to feed all your people. It’s a great freezer meal! We only know mega and lots here and that recipe definitely fits. You can also make chicken, broccoli, and rice casserole in the crockpot if you have a hankering for it without a lot of time to make it. Tastes equally as good no matter how you make it.

Always spray your crockpot for easy clean up. That is the basis for any good crockpot casserole recipe. I like to cook the chicken on high for a few hours then use the liquid for my 2 cups of chicken broth. Of course, if you batch cooked chicken , by all means, use that instead.
Don’t have or can’t use cream of chicken soup? Use my homemade recipe or substitute with 2 cups of sour cream and a little bit of butter. It will have the same effect as the cream of whatever soup you need. No judgment here. We mamas have to use what we got to get all these people fed. There are far more important things to worry about than if you used the correct cream soup.
Mix all the ingredients together with the exception of the broccoli. Cook on high for 3 hours or on low for 6 hours. About 30 minutes before the time is up, add in the broccoli. I like to unplug the crockpot, add in the broccoli and 2 extra cups of cheese then relid and let sit for an hour. Now I don’t have to babysit the broccoli. It heats up nicely as the cheese melts. Once the cheese is melted, serve it up to all your hungry people!

This frugal yet hearty recipe is super easy to mix up in the crockpot while you go about your day.
- 2 cups uncooked brown rice
- 6 cups water
- 2 cups chicken broth
- 26 oz can of cream of chicken soup
- 4 lbs precooked shredded chicken
- 1 TBSP garlic powder
- 1 TBSP onion powder
- 1 TBSP parsley
- 1 tsp salt
- 1 tsp pepper
- 4 cups shredded cheese
- 52 oz of broccoli (hold for end and thaw if frozen)
- Spray crockpot. Mix all ingredients except broccoli
- Cook on high for 3 hours or low for 6 hours
- About 30 mins before cooking time ends, throw in bag of broccoli and 2 cups additional cheese if desired.
- Unplug, relid and let sit for about an hour or until cheese is melted.
