- 2 pound ground beef, browned and drained
- 2 cup uncooked quinoa

- 2 (15 ounce) can black beans, rinsed and drained
- 2 (19 ounce) can red enchilada sauce
- 2 green bell pepper, seeded and diced
- 2 small onion, diced
- 2 (15 ounce) can diced tomatoes in sauce
- 2 (4 ounce) diced green chiles
- 1 cup beef broth
- Juice of 1 lime
- 2 tablespoon chili powder
- 2 teaspoon ground cumin
- 2 teaspoon ground coriander
- Salt and black pepper, to taste
- 3 cups shredded fiesta blend cheese, divided
