Ingredients
- 12 to 18 fajita size flour tortillas
- 4 cups cooked chicken. Shredded
- ½ cup buffalo sauce
- 1 packet ranch dressing mix
- 4 cups Monterey jack cheese, shredded
- Blue cheese dressing, for dipping
Instructions

Preheat the oven to 400 degrees. Prepare 2 large baking sheets by lining with parchment paper.

In a large mixing bowl, combine the chicken and buffalo sauce; set aside.

Lightly oil one side of each tortilla with olive oil, and place on the baking sheets.

Flip the tortillas over, working with one half of each tortilla, layer some cheese, buffalo chicken and the remaining cheese.

Fold the top half of each tortilla over the filled half.

Place in the oven and bake for approximately 20 minutes or until crisp and golden.

These may be served with the blue cheese dressing for dipping or additional buffalo sauce, depending on how spicy your family likes them.
