Large Family Freezer-Friendly Pork Chops and Rice CasserolePrint
This tasty meal is easy to make and tastes great. It’s a classic recipe the whole family will enjoy.
4 to 5 pounds (1 family pack) boneless pork loin chops
3 cups uncooked white rice
3 (10 ¾ ounce) cans cream of mushroom soup
6 cups beef broth
2 (1 ounce) packets onion soup mix
1 teaspoon garlic powder
1 teaspoon onion powder
Salt and black pepper, to taste
Chopped parsley, for garnish
Preheat the oven to 350 degrees. Prepare two 9×13 casserole dishes with nonstick cooking spray.
Divide the rice between the two casserole dishes.
Mix together the soup, beef broth, and onion soup mix. Divide between the two casserole dishes.
Place pork chops on top of the rice mixture and sprinkle with garlic powder, onion powder, salt, and black pepper as desired.
Cover with aluminum foil and bake for 45 minutes, stirring the rice mixture around the chicken halfway through the cooking time. Check for doneness of the pork and rice. Continue baking an additional 10 to 15 minutes if needed.
Sprinkle with chopped parsley if desired.
How to freeze: Cover tightly with aluminum foil and freeze up to 3 months. Thaw in the refrigerator overnight. If using glass baking dishes, place on the counter as the oven preheats. Remove the aluminum foil. Follow the above instructions to bake.
