Ingredients Needed to Make the Pork Chops and Rice Casserole

Make the Pork Chops and Rice Casserole using these essential ingredients:

  • Pork Chops. Get a family pack of boneless pork chops. If you want to try other pork chop recipes, here is my Sweet and Sour Pork Chops, a Lemon Pepper Pork Chops and Veggies, or my Apple Sauce Pork Chops.
  • White Rice. You will need uncooked white rice to add to the casserole dish.
  • Cream of Mushroom Soup. Give your casserole that creamy consistency with cream of mushroom soup.
  • Onion Soup Mix. Add flavor and thin pieces of onions to the mix using a packet of onion soup.

You will also need beef broth, salt, pepper, garlic powder, onion powder, and parsley to prepare this creamy casserole for your family.

Can I Make the Cream of Mushroom Soup?

When preparing the Pork Chops and Rice Casserole, you will need three cans of cream of mushroom soup. If you do not like the canned version of the soup, you absolutely can make your own version of cream of mushroom soup.

It requires a bit more work, but you can make it in advance specifically for this recipe. Combine chicken broth with fresh sliced mushrooms, butter, evaporated milk, and all-purpose flour to make it from scratch.

Which Pork Chops Are Best to Use?

It is best to use boneless pork loin chops. You do not want to accidentally bite down on a piece of bone while trying to enjoy this large family pork meal! Pork loin chops are thin, long, and easy to work with, which makes them an excellent cut of meat to use in your freezer-friendly casserole. 

Can I Make the Dish With Chicken?

If you do not have pork chops but you want to make this meal, you can use boneless, skinless chicken breast and make this a chicken meal. However, there is something about pork chops that go perfectly with the cream of mushroom soup and white rice, so it is a good idea to use them!

What Can I Serve with the Pork Chops Casserole?

You might want to add vegetables or a side to this recipe to make it a complete meal. Your large family would enjoy Sheet pan Roasted Broccoli, Collard Greens with Ham, Green Bean Casserole, Instant Pot Corn on the Cob, or Steamed Carrots.

Other options would include adding a delicious dessert. Treats that you might try are Baked Apples, Low Carb Peanut Butter Cheesecake, Peppermint Mocha Donuts, or Oatmeal Raisin Cookies.

How to Freeze the Pork Chops and Rice Casserole

Assemble the recipe completely. Place aluminum foil over your Pork Chops and Rice Casserole, seal it tightly, and place it in the freezer. You can store this easy-to-make oven dinner for a maximum of three months. When you plan on eating the casserole, pull it out from the freezer, put it in the fridge to thaw for 12-24 hours, and then follow the baking instructions.

Large Family Freezer-Friendly Pork Chops and Rice Casserole

Description

This tasty meal is easy to make and tastes great. It’s a classic recipe the whole family will enjoy. 


Ingredients

4 to 5 pounds (1 family pack) boneless pork loin chops

3 cups uncooked white rice

3 (10 ¾ ounce) cans cream of mushroom soup

6 cups beef broth

2 (1 ounce) packets onion soup mix

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and black pepper, to taste

 

Chopped parsley, for garnish


Instructions

  1. Preheat the oven to 350 degrees. Prepare two 9×13 casserole dishes with nonstick cooking spray.

  2. Divide the rice between the two casserole dishes.

  3. Mix together the soup, beef broth, and onion soup mix. Divide between the two casserole dishes.

  4. Place pork chops on top of the rice mixture and sprinkle with garlic powder, onion powder, salt, and black pepper as desired.

  5. Cover with aluminum foil and bake for 45 minutes, stirring the rice mixture around the chicken halfway through the cooking time. Check for doneness of the pork and rice. Continue baking an additional 10 to 15 minutes if needed. 

  6. Sprinkle with chopped parsley if desired.


Notes

How to freeze:  Cover tightly with aluminum foil and freeze up to 3 months. Thaw in the refrigerator overnight. If using glass baking dishes, place on the counter as the oven preheats. Remove the aluminum foil. Follow the above instructions to bake.
