Ingredients Needed to Make the Barbecue Chicken, Corn, and Zucchini

If you want to make the Barbecue Chicken, Corn, and Zucchini, gather these important ingredients:

  • Chicken Thighs. Grab around four pounds of chicken thighs before you start to season your meat. If you like chicken meals then try my Slow Cooker Chicken Tortellini freezer meal.
  • Olive Oil. Use olive oil to coat your chicken before covering it in spices.
  • Chili Powder. The chili powder offers the perfect taste to the chicken to make it more flavorful.
  • Barbecue Sauce. Use your favorite brand and flavor of barbecue sauce to add to your chicken.
  • Mixed Bell Peppers. Remove the seeds from your bell peppers and cut them into chunks.
  • Frozen Corn on the Cob. Use frozen corn on the cob to add to the sheet pan with the chicken.
  • Zucchini. Cut the zucchini lengthwise and then into 1-inch pieces.

You should also have salt and pepper to use for seasoning the vegetables. Oh, and don’t forget to add this delicious meal to your weekly menu!

Other Vegetables to Add to Your Sheet Pan Dinner

Description

Make a tasty meal together in one pan with this Large Family Barbecue Chicken, Corn, and Zucchini Sheet Pan Dinner. It is the perfect dinner to serve when you want something simple, healthy, and delicious.

 


Ingredients

  • 3 to 4 pounds chicken thighs, about 12
  • ¾ cup olive oil, divided
  • ¾ teaspoon chili powder
  • Salt and black pepper, as desired
  • ¾ cup barbecue sauce
  • Mixed bell peppers, seeded and cut into chunks
  • 3 zucchini, cut in half lengthwise and then sliced into 1-inch pieces
  • 12 ears frozen corn on the cob

 


Instructions

  1. Preheat the oven to 425 degrees. Prepare two rimmed baking sheets by lining with aluminum foil and spraying lighty with nonstick cooking spray.

  2. Divide the chicken thighs between the two baking sheets, spacing evenly apart. Brush with olive oil and season with chili powder. Place in the oven and bake for 15 minutes.

  3. Meanwhile, place the zucchini and peppers in a large bowl. Drizzle with remaining oil and season as desired with salt and black pepper. 

  4. Remove the baking sheets from the oven and arrange the corn, zucchini, and mixed peppers around the chicken thighs.

  5. Brush the chicken thighs with the barbecue sauce on all sides.

  6. Return the baking sheets to the oven and bake for an additional 25 to 30 minutes or until the chicken reaches an internal temperature of 165 degrees.
